An infusion is a decoction of plants, which is obtained by pouring (often boiled) water on it. It is also the designation for this method of preparation.
The process is applied to plants where the desired solutes are volatile or readily soluble in water or oil. When preparing an infusion, water of the desired temperature is poured over the herbs, after which the mixture is allowed to infuse.
